TOOLS: 2 Saucepans, wooden spoon, bowl, strainer
METHOD

COOK
Place saucepan on medium heat ● add quinoa and 1 cup of water per ½ a cup of quinoa ● bring to the boil then reduce to low heat and simmer until water is absorbed (10 minutes) remove from heat and cover

PREP
Finely dice onion, mince garlic and finely chop chilli (removing seeds depending on heat preferences) ● destem the silverbeet, thinly slice the stems, and roughly chop the leaves ● slice carrots into rounds ● drain and rinse the cannellini beans

CHILLI OIL
Place saucepan on medium heat with 2(4) tbsp of oil ● add chilli and garlic and cook for 3-4 minutes until it starts to brown ● place in a bowl to cool down and sprinkle with some salt

COOKING
Place the same pan use for the chilli oil back on medium heat and add 1(2) tbsp of oil ● add onion, silverbeet stems (leaving leaves) and carrot to the pan ● cook until softened 4-5 minutes ● add spice mix, stock cube and 2.5(5) cups of water to the pan ● bring to the boil then simmer

FINISH & SERVE
Add drained cannellini beans and the silverbeet leaves to the soup, simmer for 3 minutes ● taste and season if required ● to serve, add quinoa to the bottom of a bowl and place soup over the top ● drizzle the chilli oil over the soup and serve soup with the bread roll
