Vietnamese Broth with Quinoa & Greens

Light easy and delicious, this Vietnamese broth filled with green goodness is the perfect light vegan meal. Full of healthy ingredients like quinoa, spinach and broccolini. A little lime and chilli to spice things up. Enjoy

TOOLS: Saucepan, wooden spoon/ spatula

METHOD

1

PREP                                  

Finely chop garlic and ginger ● gently bruise  lemongrass with the back of a knife ● deseed and finely chop chilli (keeping seeds if you prefer more heat)

COOK                                    

Boil 1 (2) litre of water in a kettle ● heat saucepan with 1 (2) tbsp of oil on medium heat ● add lemongrass, garlic, ginger & chilli ● cook for 3-4 minutes ● add quinoa, stock cube and 1(2) litre of boiling water ● turn heat to a low and simmer for 15 mins until quinoa has softened

PREP & SLICE                               

Cut the tops off the broccolini then slice both pieces in half, lengthwise through stems ● remove threads from the snow peas and slice lengthwise in 3-4 pieces ● slice spring onion in rings ● remove mint leaves from stalk and roughly chop

REMOVE & COOK                  

Add broccolini to the broth (after the 15 minutes in step 2) ● cook for 2 minutes ● then add snow peas for another 2 minutes ● finally add spring onion and turn heat off ● add soy sauce and half of the lime juice ● taste and season if necessary ● remove lemongrass from broth

FINISH & SERVE                   

Add spinach and mint leaves to the broth and stir through ● slice remaining lime into wedges ● serve soup in bowls and finish off with a lime wedge
