Sweet potato cakes with broccolini and spicy mayo

Potato cakes. Yes please! These potato cakes made with sweet potatoes and corn are a delight. The broccolini and spicy sauce will balance out the sweetness of the cakes perfectly. Enjoy this vegan dish.

TOOLS: Saucepan, strainer, mixing bowl, 2 fry pans

METHOD

PREP                                   

Bring water to the boil in a large saucepan ● peel potato and slice into 1cm cubes ● cook for 5-8 minutes until tender and soft ● drain potatoes and let them cool slightly ● mix in a small bowl:  mayonnaise, hot sauce and 1(2) tbsp of warm water, and set aside

SLICE & PREP                    

Finely mince garlic ● slice chilli finely removing seeds depending on heat preferences ● drain sweet corn and roughly slice coriander ● mix all of these ingredients in a bowl ● add potato and flour and mash with a fork ● season with salt

FRY & SHAPE                        

With your hands divide the potato mixture into 8(16) equal pieces ● shape mixture into 1cm thick cakes ● heat 2(4) tbsp of oil in a fry pan on medium heat ● when the oil is hot, fry cakes for 2-3 minutes each side until golden

SLICE & COOK                  

Remove the bottom 1cm from the broccolini ● slice broccolini lengthwise once or twice depending on the size and thickness ● heat fry pan with 1(2) tbsp of oil on medium heat ● fry broccolini for 2-3 minutes, then add 1/3 of a cup of water and let evaporate ● season with S&P

FINISH & SERVE               

Place the potato cakes and broccolini in a bowl ● drizzle the spicy mayonnaise over the top and garnish with peanuts
