Sweet Potato & Broccoli Laksa

TOOLS: saucepan, fry pan, mixing bowl, spatula/wooden spoon, clingwrap
METHOD

PREP
Peel sweet potato and cut into 1.5cm cubes ● lay flat on a plate, cover with clingwrap and cook in microwave on high for 5-7 mins (ensuring they are soft in the middle when pierced)

COOK
Heat 1(2) tbsp of oil in large saucepan on medium heat ● fry herb mix and curry paste for 2 minutes, stirring continuously ● add coconut milk, stock cube and 500ml (1000ml) of water ● bring to the boil, then reduce heat to low and simmer for 5 minutes

PREP & FRY
Cut tofu into 2cm cubes and pat dry with paper towel ● mix corn flour with some salt & pepper on a plate ● toss and coat all tofu pieces evenly in flour mix ● heat 1 (2) tbsp of oil in fry pan on medium heat ● fry tofu until golden on all sides

PREP
Place noodles in a bowl and cover with boiling water ● after 6 minutes, drain noodles and portion them into serving bowls ● cut broccoli into small florets ● add broccoli and sweet potato into soup, simmer for 3 minutes ● add soy sauce and half of the lime juice

SERVE
Portion vegetables and soup into serving bowls over noodles ● add bean sprouts and tofu ● roughly chop mint & coriander and cut remaining lime into wedges ● sprinkle herbs over the laksa and garnish with lime a wedge
