Sticky Rice with Fried Tofu and Spicy Greens

TOOLS: Fry pan, saucepan, bowl, kitchen paper, wooden spoon
METHOD

COOK
Place rice in a saucepan and add 1.75 cups of water per cup of rice ● cover, bring to the boil, reduce to low and simmer for 15 minutes ● remove from heat and let rest for 5 minutes with lid on ● fluff with a fork

PREP
Julienne ginger and chilli (slice into thin matchsticks) ● finely slice garlic ● slice coriander stalks into 3cm lengths while coarsely chopping the leaves

TEAR & FRY
Tear tofu with a fork into 2cm pieces ● place in a bowl with corn flour, turmeric and a good pinch of salt & pepper ● mix well ● place fry pan on high heat with 2(4) tbsp of oil ● fry tofu until golden in 4-5 minutes ● place on a plate with kitchen paper

FRY
Place fry pan back on high heat ● when hot add 2(4) tbsp of oil, ginger, chilli and garlic to the pan ● fry for 3-4 minutes stirring regularly ● add peanuts-sesame seeds, coriander & a good pinch of salt and cook for 1-2 minutes ● squeeze the juice of ¼(1/2) a lime through the mixture and remove from heat

FINISH AND SERVE
Slice remaining lime in wedges ● place rice in a bowl ● top with fried tofu ● finish off with the crispy greens and a lime wedge
