A bowl of delicious flavored noodles, with roasted veggies & beetroot served with a spicy dressing. 100% vegan 100% delicious. What else would you want? This dish has so much goodness in it please enjoy.

TOOLS: Strainer, 2 bowls, oven, baking paper, frypan, kettle

METHOD

PREP                                     

Pre-heat oven to 230C ● finely mince garlic and ginger ● slice onion into half rings ● peel beetroot and julienne (slice into matchstick size pieces) ● slice carrot in 0.5cm thick matchsticks ● slice spring onion into 3cm long pieces

COOK                                

Place frypan on medium heat with 1.5(3) tbsp of oil ● add onion and cook for 5 minutes ● add garlic, ginger and curry powder cook for 1 minute ● add beetroot, coconut milk, and ½(1) cup of water ● bring to the boil then simmer for 20 minutes ● add more water if mixture becomes too thick

ROAST                               

Place carrot and spring onion in a bowl ● drizzle with ½(1) tbsp of oil, S&P and mix well ● place on an oven tray with baking paper ● bake for 12-14 minutes until tender

BOIL & MIX                     

Cover the rice noodles with boiling water for 7-8 minutes until cooked ● drain and rinse under cold water ● finely chop peanuts and chilli ● zest lime into a bowl and mix with salt, chilli and lime juice

FINISH & SERVE                

When beetroot is cooked, taste and add salt if needed ● add rice noodles to the pan with beetroot mixture and gently toss around ● place noodle beetroot mixture in a bowl and top with roasted vegetables ● mix peanuts through dressing and garnish the dish with the dressing
