Smokey Jackfruit Burger

Vegan burger bun 2 4
Jackfruit 1 can 2 cans
Herb mix jackfruit (cumin, coriander, oregano, smoked paprika) 1 tbsp 2 tbsp
Potato 2 4
Spice mix chips (garlic, onion, oregano, sweet paprika, cayenne) 1 tbsp 2 tbsp
Garlic 2 clove 1 cloves
Barbeque sauce 60 gr 120 gr
Salad 1/2 1
Tomato 1 2
Jalapenos 1 2
*Oil 2 tbsp 4 tbsp

TOOLS: saucepan, fry pan, baking tray, grater, spatula/wooden spoon

METHOD

PREP & ROAST
Preheat oven to 220C ● cut  potato into 1cm wide chips (skin on) ● place into large bowl with 1(2) tbsp of oil and mix well ● spread evenly on a oven tray ● bake for 20-35 minutes, turning a few times during baking ● when ready, remove from oven and season with spice mix (chips) & salt

PREP                                   

Finely chop the jalapeno and onion ● mince the garlic ● drain and rinse jackfruit ● slice jackfruit lengthways into 2cm pieces and shred with a fork ● combine jackfruit, herb mix (jackfruit), and a good pinch of salt in a bowl and mix well

COOK                                   

Heat saucepan with 1(2) tbsp of oil on medium heat ● add onion and fry for 3 minutes ● add jalapeno & garlic and fry for 1 more minute ● add jackfruit and cook for 2-3 more minutes ● add BBQ sauce and 60ml(120) of water ● simmer for 10 minutes, adding more water if needed

TOAST
Cut burger buns in half and dry roast in a non-stick fry pan on medium heat until golden

FINISH & SERVE
Thinly slice tomato ● taste jackfruit mix and season if necessary with salt & pepper ● place jackfruit mix on burger bun and top with tomato and salad ● serve chips on the side
