Chickpeas 400 gr 800 gr
Parsley 3 stalks 6 stalks
Cherry tomato 100 gr 200 gr
Tofu 250 gr 500 gr
Corn starch 2 tbsp 4 tbsp

Nutritious and delicious. The smashed chickpeas are bursting with flavor, combined with the fresh zesty dressing and crispy tofu this plant-based dish has everything you need for a easy delicious dinner.

TOOLS: 2 Saucepan, fry pan, food processor, spatula, 2 bowls

METHOD

PREP                                        

Bring a small saucepan with water and salt to the boil ● mince garlic ● finely slice onion ½(1)  ● roughly chop parsley ● zest lemon ● quarter tomatoes ● remove top and tails from beans then halve them

BOIL & MIX                         

Add beans to the pan with boiling water ●  cook for 4 minutes then drain under cold water ● place into a bowl: parsley, onion, half of the garlic, tomatoes, juice of half a lemon, capers, 1(2) tbsp of olive oil, salt & pepper ● finally add the green beans and mix carefully

BLEND                                

Drain chickpeas and place into food processor ● add zaatar, other half of the lemon juice, remaining garlic, 2(4) tbsp oil, ¼(1/2) cup warm water, salt & pepper ● pulse but don’t smoothen

FRY                                      

Drain tofu and pat dry ● slice into 1cm cubes ● place into a bowl with corn flour, lemon zest and a good pinch of salt & pepper ● mix ● place fry pan on high heat with 2(4) tbsp of oil ● fry tofu crispy and golden in 4-6 minutes ● season if necessary

FINISH & SERVE             

Warm-up the smashed chickpeas in a saucepan on medium heat ● place smashed chickpeas into a bowl, top with tofu and the tomato capper dressing
