Sicilian style Lemon Broccoli

Quinoa ½ cup 1 cup
Onion 1/2 1
Spice mix ( Italian herbs, sweet paprika) 1 tsp 2 tsp
Garlic 1 clove 2 cloves
Broccoli 1 big floret 2 big florets
Spinach handful 2 handulls
Veggie stock cube 1 2
Lemon 1 2
Pine nuts 25 gr 50 gr
Parsley 4 stalks 8 stalks
Capers 1 tbsp 2 tbsp

TOOLS: Saucepan 2 fry pans, spatula/wooden spoon, mixing bowl

METHOD

PREP  & CHOP                              

Finely dice onion ● cut broccoli crown into larger florets and thinly slice ● pick and roughly chop the parsley ● mince the garlic

COOK                                      

Place saucepan on medium heat ● add 1(2) tbsp of oil and diced onion ● cook for 3 minutes add spice mix and quinoa ● cook for 1 more minute ● add stock cube and 1 cup of water on ½ a cup quinoa ● bring to the boil then reduce to low and simmer till water is absorbed (10 minutes) remove from heat and cover

MIX & FRY                    

Squeeze ½(1) the lemon juice in a bowl ● heat small fry pan with 1(2) tbsp of oil on medium heat ● add pine nuts and minced garlic to the pan cook golden in 2 minutes ● when ready add to lemon juice with the chopped parsley and capers ● add 2(4) more tbsp of oil mix and season

FRY                                      

Heat large fry pan with 1(2) tbsp of oil on high heat ● sauté the broccoli on high heat tossing it around constantly ● add the water to help cook the broccoli ● when evaporated turn of heat and mix in the spinach stir it till welded ● season with salt & pepper

FINISH & SERVE                 

Slice the left over lemon in thin rounds ● place quinoa in bowl ● top with broccoli and spinach ●  drizzle dressing generously over the dish
