Red Curry Noodle Soup

TOOLS: Saucepan, fry pan, wooden spoon/spatula, grater

METHOD

PREP                                     

Slice mushrooms lengthwise ● finely chop garlic ● grate ginger ● slice capsicum in matchsticks ● chop broccolini into florets and slice the stems thinly ● slice spring onion into rings ● finely slice chillies

FRY                                      

Place fry pan on high heat with 1(2) tbsp of oil ● add mushrooms and cook for 3-4 minutes until they start to brown ● add 1(2) tbsp of soy sauce then add capsicum, ginger, garlic, chilli (amount to match your heat preference) ● reduce heat and cook for 5-6 minutes

COOK                                    

Boil ½(1) litre of water in the kettle ● add to a saucepan with 1(2) tbsp of soy sauce, 200(400)ml of coconut cream, stock cube and curry paste ● once boiling, turn to a low heat and add the noodles and broccolini ● simmer for 4-5 minutes

TASTE & SLICE                   

Slice limes into wedges ● taste both the soup and the capsicum mix, and add salt & pepper if required

FINISH & SERVE               

Place noodles with broccolini in a bowl ● top with capsicum and mushroom mix ● gently poor the soup into the bowl ● garnish with spring onion, sesame seeds and a lime wedge
