Pumpkin Sweet Potato Soup with Salsa Verde

TOOLS: Oven, baking tray, saucepan, wooden spoon, food processor , grater
METHOD

PREP & ROAST
Preheat oven to 180C ● peel potatoes and slice into 2 cm pieces ● cut pumpkin into 3 cm pieces leaving skin on ● place both on the oven tray ● add 2 (4) cloves of unpeeled garlic and drizzle with 2 (4) tbsp of oil, salt and pepper ● toss and roast for 25- 30 minutes

MIX
Place in food processor: parsley (leave some leaves aside for garnish), 1(2) clove of garlic, zest of lemon, lemon juice ½ (1), salt & pepper and 4 (8) tbsp of olive oil ● blend into a runny green paste ● add more oil if needed ● set salsa verde aside leave food processor on benchtop don’t clean

PREP & COOK
Dice onion ● heat saucepan on medium heat with 1(2) tbsp of oil ● cook onion for 3-4 mins until softened ● add spice mix and cook for 1 more min ● add boiling water and stock cube ● when ready add potato & pumpkin to the pan ● turn heat to low and simmer for 5 minutes

SERVE & FINISH
Place soup in a bowl ● drizzle with the salsa verde and some drops of olive oil ● garnish with pumpkin, sunflower seeds and parsley (set aside under step 2) ● crack some pepper over the top and serve the pita bread on the side
