TOOLS: Oven, baking Tray, Baking paper, saucepan, large fry pan, food processor
METHOD

PREHEAT OVEN & PREP
Preheat oven to 190C ● halve onion and cut into thin slices ● slice capsicum into julienne/matchstick pieces ● thinly slice mushrooms ● finely chop garlic

FRY
Heat fry pan on medium heat with 1(2) tbsp of oil ● add the onion and capsicum and cook for 6 minutes ● add the mushrooms ● cook for a further 4-6 minutes (or until the capsicum is soft and slightly charred) ● season with salt & pepper

PREP SAUCE & PULSE
Place saucepan on low heat ● add ½(1) tbsp of oil and garlic to pan and cook for 1 minute ● add the diced tomato and Italian herbs ● bring to the boil, season with salt & pepper ● place vegan cheese mix in food processer and pulse into a fine mixture

BAKING
Cover baking tray with baking paper and place pita breads on top ● top pita with tomato sauce ● divide the sautéed veggies, placing over the sauce ● place pizzas in oven for 8-12 minutes until golden brown (check regularly as bread can brown quickly)

SERVE
When cooked remove pizzas from the oven ● sprinkle the cheese generously over the pizza and finish off with some fresh basil leaves
