Pasta with Creamy Miso Sauce and Zesty Salsa Verde

Breadcrumbs 2 tbsp 4 tbsp
Miso paste 1.5 tbsp 3 tbsp
Raw cashews 40 gr 8 gr

Pasta lovers! This exciting plant-based pasta recipe is one that you will love. Bursting with flavor and exciting textures. The Miso paste gives this vegan dish such a depth and the salsa verde really gives that fresh zingy touch to balance out the creaminess of the carrot and cashews. Enjoy!

TOOLS: Kitchen machine, fry pan, 2 saucepans, wooden spoon

METHOD

PREP                                    

Bring water to the boil in medium saucepan with a pinch of salt ● dice onion, mince 3(6) cloves of garlic and slice carrots into small cubes

COOK                                  

Heat a second large saucepan with 2(4) tbsp of oil ● add diced onion and cook for 4 minutes ● add garlic & carrot, cook for 2 more minutes ● add cashews, 1(2) cup(s) of water, S&P● bring to the boil then simmer for 15-18 minutes (until carrots soften) ● add extra water when mixture becomes too dry

MIX & COOK                       

Cook pasta in boiling water for 7-9 minutes ● drain when ready ● for salsa verde add to food processor: remaining garlic, parsley including stems, lemon zest plus juice of ½(1) lemon, 5(10) tbsp of olive oil and S&P ● blend into a runny paste ● add more oil if needed ● remove and set aside

BLEND & PAN FRY              

When carrots are soft add miso to the sauce ● cook for 2 more minutes ● move mixture into empty food processor and blend into a smooth sauce ● place back into pan and season if necessary ● bring fry pan to medium heat ● dry roast bread crumbs until golden

FINISH & SERVE                

Heat the sauce through and add pasta to the sauce ● place pasta mixture in bowls ● garnish with salsa verde and bread crumbs
