Mexican Beans with Quinoa and Roasted Corncob

METHOD

COOK & ROAST
Remove leaves from corncob ● dry roast corn in a fry/grill pan on medium heat regularly turning the corn for 15 minutes ● place quinoa in a small saucepan with stock cube and add 1 cup of water per ½ cup of quinoa ● bring to the boil then simmer until cooked (around 10 minutes)

PREP
Finely dice onion and garlic ● slice capsicum into small cubes ● slice spring onion into small rings

COOK
Heat frypan on medium heat with 2(4) tbsp of oil ● add onion and capsicum ● cook for 3-4 minutes ● add garlic and spice mix, cook for 2 more minutes ● add diced tomatoes, black beans and bring to a simmer for 5 minutes

SLICE & MIX
Remove corncob from the pan and set it up straight on a cutting board ● using a knife, slice the kernels off the cob ● mix kernels and spring onion through bean mixture keeping some aside for garnish ● mix quinoa into the mixture

FINISH & SERVE
Slice lime into wedges ● sprinkle some juice over the dish ● taste and add salt if needed ● place mixture in bowls and garnish with remaining spring onion and corn, top with a lime wedge
