Seasoning mix: (garlic/onion/cumin/chilli/paprika) 1 tbsp 2 tbsp

TOOLS: Large fry pan, saucepan, wooden spoon, strainer, mixing bowl

METHOD

COOK                                 

Wash rice in strainer ● place rice in saucepan with 2(4) cups of water and a pinch of salt ● bring to the boil then simmer, covered with a lid, for 20-25 minutes

SALSA                                  

Peel orange and dice into small cubes ● slice spring onion into small rings ● dice tomato ● finely slice ½(1) jalapeno ● place all these ingredients into a bowl ● squeeze juice of ½(1) lime and a pinch of salt into the bowl ● mix gently and set aside

SLICE                                  

Finely dice red onion ● remove seeds from capsicum and slice into small cubes ● drain black beans ● mince garlic

COOK                                 

Place fry pan on medium heat with 2(4) tbsp of oil ● add onion, garlic and capsicum ● cook for 3-4 minutes ● add drained black beans and seasoning mix ● mix well ● add brown rice ● mix gently, add salt if needed

FINISH & SERVE               

Serve the dish directly out of the fry pan ● place the orange tomato salsa over the rice mix ● slice remaining lime into wedges and place on top
