Jamaican Coconut Rice with Beans, Mango Salsa & Crunchy Sweet Potato

Bring the Caribbean on to your dinner table with this full vegan super tasty Jamaican coconut rice with Beans, mango salsa & crunchy sweet potato.

TOOLS: Saucepan, baking tray, oven, mixing bowl, fry pan, baking paper

METHOD

BAKE                              

Preheat oven to 220 C ● slice sweet potato into 1.5 cm wide wedges (skin on) ● place wedges on baking tray with baking paper ● add spice mix, salt and 2(4) tbsp of oil ● mix and place into oven for 20-22 minutes until golden and tender

PREP                                      

Finely dice onion and divide  into two equal portions ● mince garlic and divide into two equal portions ● peel mango slice into cubes and place into a bowl ● drain and rinse kidney beans

COOK                                 

Place saucepan on medium heat with 2 tbsp of oil ● fry half of the onion and garlic for 2 minutes ● add rice 200(400) ml of coconut milk and 1(2) cup(s) of water ● cover, bring to the boil, reduce to low and simmer for 15 minutes ● remove from heat and let rest for 5 minutes with lid on

SALSA & FRY                        

Add remaining onion and garlic to the mango ● add sugar, ½(1) juice of the lime, salt and pepper ● mix well and set aside

Place fry pan on high heat with 1(2) tbsp of oil ● fry beans for 1 minute then add the cooked rice and mix

FINISH & SERVE              

Place rice and bean mixture into bowls ● top with the crunchy sweet potato chips and mango salsa ● slice remaining lime in wedges and place on top
