Jackfruit Quesadillas with Avocado and Black Beans

TOOLS: 2 Fry pans, spatula, strainer
METHOD

PREP
Halve leek lengthwise and slice in half rings ● wash leek to remove dirt ● drain and rinse jackfruit and slice into 2cm pieces ● drain black beans

COOK
Heat fry pan on medium heat with 1(2) tbsp of oil ● add leek, jackfruit and a good pinch of salt to the pan ● fry for 5-7 minutes ● add spice mix and juice of ½(1) a lemon ● cook for 2 more minutes ● add coconut cream and black beans ● bring to a simmer and reduce into a thick creamy sauce 5-7 minutes

SLICE & TASTE
Cut avocado in half and remove the stone, scoop out the flesh and slice into long strips ● thinly slice chilli ● taste jackfruit mix and add salt & pepper if needed

FRY
Place a large fry pan on medium heat ● place pita bread in the pan ● place the creamy jackfruit mixture on one side of the pita ● top with some avocado and chilli ● fold over the top then carefully flip over the pita around ● cook for a further minute until browned and crispy

FINISH & SERVE
Move the quesadillas onto a chopping board and with a big knife cut into halves
