Gochujang Braised Tofu with Broccolini

METHOD

COOK
Place rice in a saucepan and add 1.5 cups of water per cup of rice ● cover, bring to the boil, reduce to low and simmer for 15 minutes ● remove from heat and let rest for 5 minutes with lid on ● fluff with a fork

PREP & MIX
Mince garlic ● finely grate ginger and pear ● finely slice spring onion ● cut tofu into 1cm thick slices ● slice broccolini lengthwise in half ● mix in a bowl: pear, ginger, garlic, spring onion, syrup, soy sauce, gochujang paste, 1(2) tbsp of oil and 2(4) tbsp of water

FRY
Place a large fry pan on medium heat with 4(8) tbsp of oil ● place tofu in the pan and fry until golden on both sides (around 8 minutes) ● remove from the pan and place tofu on a plate with paper towel to absorb the excess oil

REDUCE & FRY
Remove excess oil from the fry pan and add the pear- gochujang mix ● bring to the boil then reduce heat and simmer for 5 minutes ● place second fry pan on high heat with 1(2) tbsp of oil ● when hot add broccolini and stir fry for 5 minutes ● add sesame seeds and S&P

FINISH & SERVE
Poor half of the sauce into a bowl ● top with the fried tofu and some more sauce ● garnish with broccolini and serve rice on the side
