Gochujang braised tofu with broccolini

Such an explosion of flavors. This plant-based dish is truly exceptional. The Korean Gochujang paste really lifts up this dish and gives it so much dept. combined with the broccolini it is just perfect. If you prefer not have your meals to spicy just use half the amount of paste. I am sure you will love this dish! Enjoy.

TOOLS: Saucepan, 2 fry pans, grater, wooden spoon, bowl, paper Towel

METHOD

COOK
Place rice in a saucepan and add 1.5 cups of water per cup of rice ● cover, bring to the boil, reduce to low and simmer for 15 minutes ● remove from heat and let rest for 5 minutes with lid on ● fluff with a fork

PREP & MIX                                 

Mince garlic ● finely grate ginger and pear ● finely slice spring onion ● cut tofu into 1cm thick slices ● slice broccolini lengthwise in half ● mix in a bowl: pear, ginger, garlic, spring onion, syrup, soy sauce, gochujang paste, 1(2) tbsp of oil and 2(4) tbsp of water

FRY                                      

Place a large fry pan on medium heat with 4(8) tbsp of oil ● place tofu in the pan and fry until golden on both sides (around 8 minutes) ● remove from the pan and place tofu on a plate with paper towel to absorb the excess oil

REDUCE & FRY              

Remove excess oil from the fry pan and add the pear- gochujang mix ● bring to the boil then reduce heat and simmer for 5 minutes ● place second fry pan on high heat with 1(2) tbsp of oil ● when hot add broccolini and stir fry for 5 minutes ● add sesame seeds and S&P

FINISH & SERVE                 

Poor half of the sauce into a bowl ● top with the fried tofu and some more sauce ● garnish with broccolini and serve rice on the side
