Falafels with pickled salad (GFO)

Chickpeas 400 gr 800 gr
Lemon 1 2
Garlic 2 cloves 4 cloves
Red onion 1 2
Coriander ¼ bunch ½ bunch
Parsley ¼ bunch 1/bunch
Red Cabbage 1/8 ¼
Cucumber 1/2 1
Spice mix (coriander, cumin, chilli) 1 tbsp 2 tbsp
Hummus 100 gr 200 gr
*Flour 1.5 tbsp 3 tbsp
*Hot sauce 1 tbsp 2 tbsp
*Oil (vegetable, olive) 4.5 tbsp 5 tbsp
*Sugar 1 tsp 2 tsp

TOOLS: Food processor, 3 bowls, fry pan, spatula, strainer

METHOD

PICKLE                               

Finely slice red cabbage ● use ½(1) red onion, cut in half then thinly slice ● combine both in a bowl with half of the lemon juice, sugar, salt and pepper ● mix well and set aside to pickle

PREP                                   

Drain and rinse chickpeas ● dice remaining onion and finely chop garlic ● coarsely chop parsley and coriander (set aside 2(4) tbsp for salad) ● place all of the above in the food processor plus: remaining lemon juice, flour, spice mix and salt & pepper

PULSE & FRY                       

Pulse mixture making sure to keep some texture in it ● if mixture is still a bit wet add some more flour ● taste and add salt if needed ● heat fry pan on medium heat with oil (4 tbsp) ● form 1cm thick patties from the mixture ● fry patties in  pan for 4-5 minutes in total, turning them when golden

SALAD                                 

Slice cucumber into cubes ● add the set aside herbs (parsley and coriander) ● add salt & pepper and a ½(1)  tbsp of olive oil ● mix well

FINISH & SERVE               

Place pita bread on a plate ● add a good dollop of hummus in the middle and spread ● add pickled cabbage salad ● place falafels over the salad ● garnish with cucumber salad and top with hot sauce
