Falafel Wrap with Pickled Cabbage, Hummus & Mint

Flat bread 2 4
Chickpeas drained 150 gr 300 gr
Garlic 2 cloves 4 cloves
Parsley ¼ bunch ½ bunch
Mint ½ bunch 1 bunch
Cumin 1 tsp 2 tsp
Hummus 150 gr 300 gr
Red cabbage 1/8 ¼
Red onion 1/2 1
Lime 1/2 1
*Oil (vegetable, sunflower) 1 cup 1 cup
*Flour 2.5 tbsp 5 tbsp
*Hot sauce (optional) to flavour to flavour
*Vinegar (red wine, sherry, white) 1 tbsp 2 tbsp

TOOLS: Food processor, MIXING bowl, spatula, fry pan, tONGs

METHOD

MARINATE                        

Finely slice red cabbage ● chop onion in half and thinly slice ● combine all in a bowl with ½ of the lime juice, salt & pepper and vinegar ● mix well and set aside to pickle

PREP                                      

Place in food processor:  peeled garlic, drained chickpeas, cumin,  1.5 tbsp of flour, parsley & half of the mint leaves ● add a good pinch of salt and blitz until almost smooth ● check consistency (if it is too wet add the remaining flour)

SHAPE & FRY                   

Shape four chickpea patties per person, each patty being 1 cm thick ● heat oil in a small fry pan on high heat ● when hot fry the patties for 3-4 minutes each side until golden

PREP                                       

Lay the flat bread and spread it with hummus ● roughly chop mint leaves ● place most of the pickled salad and mint leaves over the hummus (setting some of each aside for garnish) ● top with hot sauce if desired

SERVE                                

Place four falafel patties in each wrap ● roll everything up ● slice diagonally ● serve on a plate and garnish with remaining mint leaves & cabbage, along with a lime wedge
