Easy Mushroom & Kidney Bean Chilli

Mushrooms 200 gr 400 gr
Coriander 2 stalks 4 stalks
Diced Tomato 400 gr 800 gr
Kidney Beans 400 gr 800 gr
Spice mix (smoked paprika, chilli, cinnamon) 1 tbsp 2 tbsp
Tomato paste 1 tbsp 2 tbsp
Chilli 1 2
Rice ½ cup 1 cup
Chocolate 10 gr 20 gr
* Soy sauce 1 tbsp 2 tbsp
* Vinegar (balsamic, red, any) 1 tbsp 2 tbsp
* Sirup (Maple, Agave) 1 tbsp 2 tbsp
* Olive Oil 2 tbsp 4 tbsp

TOOLS: 1 large saucepan, food processor/blender, wooden spoon

METHOD

Mushrooms                    

Place mushrooms in food processor and pulse until finely minced (alternatively chop with kitchen knife) ● place large saucepan on medium heat with 1 (2) tbsp of oil ● add mushrooms, some salt and cook for 6-7 minutes ● transfer mushrooms into bowl and set aside

Cook & Prep                   

Place rice in a saucepan add 0.75 cup of water per ½ cup of rice ● cover, bring to the boil, reduce to low and simmer for 10 minutes ● remove from heat ● finely dice onion & chilli, mince garlic ● finely dice capsicum and celery ● remove leaves coriander and finely chop the stalks

Cook                                     

Use saucepan from the mushrooms ● place on medium heat with 1 (2) tbsp of oil ● add onion, garlic coriander stalks and chilli, cook for 4-5 minutes until softened ● add capsicum and celery ● stir consistently ● drain kidney beans

Cook 2                                

Add  tomato paste, sirup, vinegar, soy sauce and spice mix to the chilli ● cook for 1 minute then add diced tomatoes and chocolate bring to the boil ● add beans and mushrooms, bring to a simmer for 5 minutes ● taste, add salt if necessary and some water if consistency is to thick

Finish & serve            

Coarsely slice coriander leaves ● place rice into the bowls then top with the mushroom chilli and finish off with the coriander leaves
