TOOLS: Oven, oventray, baking paper, mixing bowl, whisk, strainer, fry pan, spatula
METHOD

PREP
Preheat oven to 200C ● halve potatoes lengthwise, slice onion in wedges ● drizzle both with 2(4) tbsp of oil and place in the oven for 12 minutes ● remove stems from kale and tear in 3cm pieces ● roughly cut up broccolini in 3cm pieces including stems

MIX DRESSING
Place tahini in mixing bowl ● mix with sirup and ½(1) juice of a lemon setting the remaining lemon aside for garnish ● mix well ● add boiling water 3(6) tbsp till a pourable dressing consistency is reached ● season with salt & pepper

ROAST
Flip the potatoes on oven tray ● add broccolini to the tray and drizzle with 1(2) tbsp of oil ● cook for a further 8-10 minutes ● then add kale drizzle with 1(2) tbsp of oil ● toss everything around and season with salt & pepper ● cook for 4 more minutes

STRAIN & FRY
Drain and rinse chickpeas ● place in bowl and mix with spices ● place fry pan on medium heat with 1(2) tbsp of oil and fry chickpeas golden, stirring frequently ● remove from heat and season with salt & pepper

FINISH & SERVE
Slice up the potato in bite size pieces ● place roasted vegetables and potato in a bowl ● garnish with spiced chickpeas and drizzle the dressing over the top ● finish with a lemon wedge on top
