Broccoli soup with jalapenos

TOOLS: large saucepan, Bowl, food processor/blender wooden spoon/spatula
METHOD

PREP
Finely chop garlic and dice the onion ● cut broccoli into bite size florets and finely dice the stem ● slice the jalapeno into rings (set some aside for garnish) ● finely chop remaining jalapeno ● set some parsley leaves aside for garnish, and roughly chop the rest

SOAK & COOK
Place cashews in a bowl, cover with boiling water and soak for 10 minutes ● place saucepan on medium heat and add oil ● add jalapenos, onion, garlic, cook for 3 mins ● add coriander powder broccoli, stock cube and 3 (6) cups of water ● bring to boil then simmer for 10 mins

PREP
Drain the cashews ● place in blender: cashews, parsley and nutritional yeast (leaving some nutritional yeast behind for garnish)

BLEND
Add 2/3 of the soup (broth & broccoli) in the blender with the parsley and cashew mixture (you may have to do this in two rounds) ● blend until smooth starting on a low speed holding the lid with a towel ● when smooth return the blended soup to the original saucepan

SERVE
Heat the soup through, season with salt & pepper ● serve in bowls garnishing with leftover jalapeno rings, nutritional yeast and parsley. ● sprinkle with chia and flax seed mix
