Autumn salad with beans, avocado, quinoa and orange & lime dressing (GF)

TOOLS: Saucepan, 2 mixing bowls, food processor/blender, strainer, grater
METHOD

COOK
Place quinoa in saucepan with a dash of salt and add 1 cup of water per ½ cup quinoa ● bring to the boil, then reduce to low and simmer until the water is absorbed (around 10-12 minutes) ● remove from heat and cover

PREP & BLEND
Place in blender: ½ (1) avocado, juice of 1(2) orange(s), juice of lime, spice mix, syrup, coriander and oil ● blend all ingredients into a smooth dressing ● taste and season with salt & pepper

PREP
Drain and rinse corn kernels & black beans then set aside in separate bowl ● dice avocado and onion ● grate carrot ● segment remaining oranges 1(2) ● place in a large bowl and mix with the salad

HEAT & MIX
Mix the black beans and corn kernels with the cooked quinoa to heat them slightly ● add the salad mix to the quinoa bowl and carefully mix all together with 1/3 of the dressing ● season with salt & pepper

FINISH & SERVE
Place salad in bowls ● drizzle remaining dressing over the top and finish with some crushed pepper ● serve with bread roll on the side
