VegMeUp Chilaquiles with Tofu, Corn and Lime

Chipotle sauce 1.5 tbsp 3 tbsp
Pita bread 2 4
Corn kernels 125 gr 300 gr
Spice mix (cumin, chilli, garlic powder) 1 tbsp 2 tbsp
Tofu 300 gr 600 gr
Stock cube 1/2 1
Spring onion 3 6
Lime ½ 1
Coriander 3 stalks 6 stalks

TOOLS: Oven, oven tray, saucepan, fry pan, wooden spoon, brush, strainer

METHOD

1

ROAST                             

Preheat oven to 175C ● brush pita bread lightly on both sides with ½(1) tbsp of olive oil ● sprinkle with salt ● cut pita bread into triangles then place on 1 or 2 oven trays ● cook in oven for 10-12 mins, turning at the half way mark ● remove from oven when crispy and golden

PREP                                     

Dice onion and finely mince garlic ● drain and rinse corn kernels ● slice spring onion into rings ● crumble up the tofu with a fork ● finely slice the chilli (removing seed to heat preferences)

COOK                                  

Place saucepan with 1(2) tbsp of oil on medium heat ● add onion and cook for 2 minutes ● add garlic & chilli and cook for 2 more minutes ● add diced tomatoes, chipotle sauce, ½(1) cup of water and the stock cube ● bring to the boil then simmer for 4 minutes

FRY & MIX                          

Place fry pan on high heat with 1(2) tbsp of oil ● fry crumbed tofu until golden (around 3-4 minutes) ● add spice mix & corn kernels and cook for 2 more minutes ● mix the tomato sauce with the tofu ● then carefully fold in the pita chips

FINISH & SERVE                

Slice lime into wedges ● coarsely chop the coriander ● place chilaquiles in a bowl ● garnish with spring onion and coriander ● finish with a lime wedge
