TOOLS: Oven, saucepan, fry pan, spatula, strainer, baking paper
METHOD

PREP & SLICE
Preheat oven to 220C ● slice cabbage into 2cm wedges and cauliflower into small florets ● mix 2(4) tbsp of soy sauce with 2(4) tbsp of oil ● divide cabbage and cauliflower and place each on their own oven tray with baking paper ● drizzle soy-oil mix over both trays

ROASTING
Place vegetables in the oven ● cook cauliflower for around 15 minutes until tender, and cabbage for 20-25 minutes until caramelized

BOIL
Bring water to the boil in a large saucepan ● when boiling add the udon noodles and cook for 8 minutes ● when done drain and rinse noodles and set aside

SLICE & FRY
Finely slice garlic and spring onion ● heat 1(2) tbsp of oil in a fry pan and add garlic and spring onion (keeping some aside for garnish) and cook for 3 minutes ● add noodles, mirin and curry powder, and cook for 1 more minute ● add cauliflower and cabbage ● mix everything carefully

FINISH & SERVE
Add to the pan: 2(4) tbsp of soy sauce, juice of ½(1) lime and some salt to taste ● heat through and serve in bowls ● garnish with sesame seeds and the set aside spring onion
