Washed potatoes 220 gr 440 gr
Chickpeas 125 gr 250 gr

Lebanese cucumber 1 2
Cherry tomatoes 120 gr 240 gr
Spinach leaves 30 gr 60 gr
Garlic 1 clove 2 cloves
Lemon 1 2
Herb mix (mustard powder, turmeric) 1 tsp 2 tsp
Almonds 60 gr 120 gr

The Vegan version of the classic Salad Nicoise. It is very easy and light. The roasted almonds and potatoes give the salad enough body to serve it for dinner. Enjoy

TOOLS: Frying pan, saucepan, oven tray, mixing bowl, spatula/wooden spoon

METHOD

PREP & ROAST
Preheat oven to 210C ● cut potatoes into 1.5cm cubes (skin on) ● place into bowl with herb mix, 1(2) tbsp olive oil and a good pinch of salt, mix well ● spread evenly on oven tray with baking paper ● roast for 25 minutes, turning occasionally ● keep bowl aside for chickpeas

ROAST
Drain and rinse chickpeas, place chickpeas into the bowl that was used for the potatoes, mix well to coat in leftover oil/herb mix ● add chickpeas to the roasting potatoes for final 7 minutes of roasting

PREP & BLANCH
Bring a small saucepan of salted water to the boil ● trim bean ends off ● cook beans for 3 minutes ● drain and rinse under cold water to stop cooking process ● finely chop garlic, halve tomatoes and thinly slice cucumber

PREP
Heat 1(2)tbsp of olive oil in fry pan on medium heat ● cook garlic for 1 minute ● add tomatoes, cook for 3 minutes ● when tomatoes start to blister (skin starts to brown) transfer mix into a mixing bowl ● add lemon juice, 2(4) tbsp olive oil and S&P to make the dressing

MIX & SERVE
Roughly chop almonds and add to bowl ● add cucumber, spinach and beans, mix well ● finish off with roasted potatoes and chickpeas, mix well ● serve in bowl/plate
