Roasted Eggplant with Miso/Peanut Glaze & Quinoa and Broccoli

Spice mix (chilli, curry powder) 1 tbsp 2 tbsp
Quinoa ½ cup 1 cup
Broccoli 1 2
Lemon 1/2 1
*Syrup (maple, agave) 1.5 tbsp 3 tbsp
*Oil 2 tbsp 4 tbsp

TOOLS: Oven, oven tray, mixing bowl, saucepan, frypan, wooden spoon

METHOD

PREP                                

Preheat oven to 210C ● make the glaze by mixing in a bowl:  peanut butter, miso, half of the spice mix, syrup and 2(4) tbsp of water ● slice eggplant in half, then slice diagonal lines into the center of the eggplant (not piercing the skin on the bottom) ● place eggplant in on oven tray

ROAST                              

Cover eggplant with 2/3 of the glaze ● place in oven and roast for 20 minutes ● after 20 minutes, take oven tray out and add remaining glaze over the eggplant ● place back in the oven and cook for a further 5-7 minutes

COOK                                      

Place saucepan on medium heat ● add 1(2) tbsp of oil ● add diced onion and cook for 3 minutes ● add remaining spice mix and quinoa and cook for 1 more minute ● add water (1 cup of water per ½ a cup of quinoa) ● bring to the boil then reduce to low and simmer until water is absorbed (around 10 minutes) remove from heat and cover

CUT AND FRY                        

Cut broccoli crown into smaller florets and thinly slice ● heat fry pan with 1(2) tbsp of oil on high heat ● sauté the broccoli on high heat tossing constantly ● add ¼ cup of water to help cook the broccoli ● when evaporated season with S&P

FINISH & SERVE              

Place eggplant, broccoli and quinoa in a bowl ● drizzle the juice of the lemon over the top
