Spice mix (cumin, curry powder, chilli, sweet paprika) 1.5 tbsp 3 tbsp
Coconut milk 200 ml 400 ml
Wholemeal flour 60 gr 120 gr
Tomato paste 1 tbsp 2 tbsp
Tomato chutney 1 tbsp 2 tbsp
Spinach 1 handful 2 handfuls

Fluffy potato patties with spiced coconut and tomato chutney, what is not to like about this plant-based dish. Rich flavors and the acidity of the chutney go very well together.

TOOLS: 2 saucepans, grater, strainer, bowl, fork, fry pan , wooden spoon

METHOD

PREP & COOK                       

Boil water in a kettle ● peel potatoes and dice into 2cm pieces ● add potato with boiling water and salt to a saucepan ● cook until potato cubes are soft and tender (around 10-12 minutes)

SAUCE                                           

Place saucepan on medium heat with 2(4) tbsp of oil ● add onion, garlic, ginger and cook for 4 minutes ● add spice mix, tomato paste and cook for 1 more minute ● add coconut milk and ¼(1/2) of a cup of water, reduce to a low heat and simmer for 10 minutes ● season with S&P

SHAPING & FRYING               

Place strained potato mix in a bowl and add flour ● mash with a fork and season with S&P ● shape mix into 6(12) patties ● heat fry pan on high heat with 3(6) tbsp of oil ● when hot fry patties golden on each side for 3-5 minutes, then place them on a plate ● remove excess oil and wilt spinach in the same pan for 1-2 minutes stirring it around

FINISH & SERVE                

Taste sauce and season with S&P if required ● place sauce on a plate and top with spinach ● place potato patties on top and garnish with tomato chutney
