Orzotto is a different take on the more famous risotto. The risotto rice is replaced by barley, it gives a great new take on this fantastic vegan Italian dish. We have loaded it up with fresh vegetables and hazelnuts to give the dish a nice crunch. Give it a go and experience this lovely dish for yourself.

TOOLS: Large saucepan, fry pan, wooden spoon

METHOD

PREP & COOK                   

Finely dice onion ● mince garlic ● place saucepan on medium heat with 2(4) tbsp of oil ● cook onion for 3-4 minutes ● add garlic and thyme, cook for 1 minute ● add barley, stock cube and 750ml (1000ml) of boiling water ● simmer for 20-25 minutes stirring regularly

PREP                               

Remove tops and tails from green beans and cut them into 2cm pieces ● coarsely chop hazelnuts ● remove stems from kale and slice leaves finely ● slice broccolini into small pieces including the stems

COOK                                   

Add green beans, and nutritional yeast to the barley ● if the barley is becoming too dry add a splash of water ● cook for 5-6 more minutes then add the kale

FRY                                     

Place fry pan on medium heat with 2(4) tbsp of oil ● add hazelnuts and broccolini ● roast both for 3-4 minutes and season with salt
