Brussels sprouts 350 gr 700 gr
Chilli (long) 1 2
Garlic 3 cloves 6 cloves
Peanuts 25 gr 50 gr
Tomato puree 1 tbsp 2 tbsp
Ketjap manis 1 tbsp 2 tbsp
*Soy sauce 1 tbsp 2 tbsp
*Oil (olive/sesame) 3 tbsp 6 tbsp
*Vinegar 2 tbsp 4 tbsp
*Sugar 1 tsp 2 tsp

Nasi Goreng in a new jacket, the marinated brussels sprouts give this vegan dish a surprisingly nice flavor. It has freshness and depth at the same time. Try this dish for a whole new dimension of this classic. Enjoy.

METHOD

COOK                                  

Rinse rice under cold water in a strainer until water runs clear ● place rice in a saucepan and add 1.5 cups of water per cup of rice ● cover, bring to the boil, reduce to low and simmer for 15 minutes ● remove from heat and let rest for 5 minutes

PREP                                     

Dice onion finely ● mince garlic ● finely chop chilli (remove seeds for less heat) ● halve brussels sprouts, then finely slice ● coarsely chop peanuts

MARINATE                           

Take half of the brussels sprouts and place them into a bowl with: 1(2) tbsp of soy sauce, 1(2) tbsp of vinegar, 1(2) tbsp of oil (sesame/olive), 1(2) tsp of sugar ● mix well and set aside

FRY                                       

Place fry pan on medium heat with 2(4) tbsp of oil ● add onion, cook for 4 minutes ● add chilli & garlic, cook for 2 more minutes ● add remaining sprouts and cook for 6 more minutes ● add tomato paste, ketjap manis 1(2) tbsp of soy sauce and vinegar ● cook for 3  minutes

FINISH & SERVE                 

Add cooked rice to the fry pan ● mix everything gently and let the rice heat through ● season mixture with salt if necessary ● place nasi goring into a bowl ● top with marinated brussels sprout mix and garnish with peanuts
