Moroccan Couscous Salad

METHOD
1
ROAST
Preheat oven to 220C ● lightly oil whole capsicum and bake for 25 minutes (some blackening is good) ● dry roast shaved almonds in a nonstick fry pan on medium heat, stir constantly to toast evenly but not burn ● set aside to cool

PREP & COOK
Pre boil kettle ● place spice mix and 1(2) tbsp of olive oil in a saucepan on medium heat ● stir consistently and after 1 minute when aromas start to release, add couscous and water (ratio 1:1: ½ cup water per ½ cup of couscous) and salt ● remove from heat and cover with lid ● after 5 mins, fluff with a fork

PREP & COOK
Chop onion in half and into thin slices ● thinly slice spring onion ● finely grate carrot ● drain and rinse lentils ● heat fry pan on medium heat with 1(2) tbsp of oil ● fry onion for 3 minutes ● add lentils and cook for a further 2 minutes ● add carrot & spring onion, season with salt & pepper and remove from heat

PREP
When capsicum is cooked, place in a bowl and cover with clingwrap for 2 minutes (this will “sweat it” and make the skin easier to remove) ● peel skin by using a small knife ● slice into matchstick size pieces

DRESS & SERVE
Add couscous, capsicum 3(6) tbsp olive oil, vinegar and salt & pepper to the fry pan ● mix well ● coarsely chop mint ● place couscous mix in a bowl and garnish with almonds and mint leaves
