Lemon Pasta with Zucchini and Broccolini

TOOLS: Large saucepan, fry pan, wooden spoon, tongs
METHOD

PREP
Finely dice onion and mince garlic ● wash lemon and zest skin setting zest aside ● slice broccolini into small pieces including stems ● slice zucchini length wise into spaghetti-sized pieces

COOK
Place large saucepan on medium heat with 1(2) tbsp of oil ● add onion & garlic and cook for 3-4 minutes ● add 1.5(3) cups of boiling water, juice of the lemon(s), coconut milk and stock cube ● add spaghetti and bring to the boil ● then simmer for 8-10 minutes until cooked

FRY
Place fry pan on medium heat with 1(2) tbsp of oil ● add broccolini and fry for 2-3 minutes ● add zucchini and fry for another 4 minutes ● season with salt & pepper

Place fry pan on medium heat with 1(2) tbsp of oil ● add broccolini and fry for 2-3 minutes ● add zucchini and fry for another 4 minutes ● season with salt & pepper

FINISH & SERVE
Taste and season if needed ● place pasta in bowls ● garnish with set aside lemon zest
