Kale & Spinach Pesto Pasta with Roasted Tomatoes

TOOLS: 2 saucepans, 1 small fry pan, Bowl, food processor, oven, kitchen paper, strainer
METHOD

PREP
Heat oven to 180C ● bring two saucepans with water to the boil ● place fry pan on medium heat with 1 (2) tbsp of oil ● add pine nuts and roast until golden ● remove and let them cool on kitchen paper ● chop garlic

BLANCH
Add salt to the boiling water ● in one saucepan, add kale and cook for 30-40 seconds ● remove and place in a bowl of ice cold water ● drain when the kale has cooled

COOK & ROAST
Halve tomatoes, place on oven tray. Drizzle with 1(2) tbsp of oil and salt ● place in oven and cook until tomatoes start to blister (around 5 minutes) ● in the second pan, cook spaghetti al dente in 7-8 minutes then drain

BLEND
Place in food processor: zest and juice of the lemon, garlic, half of the pine nuts, half of the spinach, nutritional yeast, kale and 5(10) tbsp of oil ● blend everything into a creamy paste ● taste, season and add a splash of water if consistency is to dry

FINISH & SERVE
Place spaghetti back in the empty pan and combine with the pesto mixture ● add remaining spinach and toss ● place spaghetti in bowls and garnish with roasted tomatoes and pine nuts
