Gochujang Broth with Noodles, Silver Beet & Tofu

Delicious and tasty with a little kick. This Gochujang broth is a perfect dish on the colder days. It will warm you up from the inside out. The silver beet, noodles and tofu will give the broth enough body to enjoy it as a main meal. Have fun cooking!

TOOLS: Saucepan, fry pan, spatula, mixing bowl

METHOD

GOCHUJANG BROTH       

Finely mince garlic ● Place in saucepan: half of the minced garlic 2(4), soy sauce, tomato powder, sugar and gochujang paste (use half if you want less heat) ● add 5(10) cups of water and bring to the boil, then simmer for 10 minutes

PREP                                   

Finely dice the silver beet, keeping the stems and leaves separate ● slice tofu into small cubes and mix in a bowl with corn flour, salt and pepper

COOK (1)                            

Place noodle nest(s) in the broth and cook for 5-6 minutes, when cooked leave in broth and turn off the heat ● place saucepan on medium heat with 2(4) tbsp of oil, when hot add tofu without the excess corn flour

COOK (2)                                  

After 3 minutes add to tofu: remaining garlic, cherry tomatoes and stems of silver beet  ● cook for 3 more minutes ● add silver beet leaves, season with salt and pepper and cook for 2 more minutes

FINISH & SERVE                

Place noodles in a serving bowl ● gently place the tofu/ silver beet mixture around the noodles ● top the dish with the gochujang broth and top with squeezed lime juice
