Creamy White Beans, with Kale and Brown Rice

Brown Rice 1 cup 2 cups
White Beans 400 grams 800 grams
Lemon 1/2 1
Coconut Milk 200 ml 400 ml
Spice mix (Cumin, Chilli, Sweet Paprika) 1 tbsp 2 tbsp
Miso Paste 1 tbsp 2 tbsp
Tomato Paste 1 tbsp 2 tbsp

A fun and easy to cook vegan white bean dish. This is a bowl full of goodness with brown rice, kale and white beans. The coconut cream and spices give it a very nurturing feeling bursting with flavor, enjoy!

TOOLS: Small sauce pan, large sauce pan, wooden spoon, strainer

METHOD

COOK                                 

Wash rice in strainer ● place rice in saucepan with 2(4) cups of water and a pinch of salt ● bring to the boil then simmer, covered with a lid, for 20-25 minutes

PREP                                   

Finely dice onion ● mince garlic ● tear kale from stem into small bite-sized pieces ● drain and rinse white beans

COOK 1                               

Place large saucepan with 2(4) tbsp of oil on medium heat ● add onion and cook until softened ● add garlic, cook for 2 more minutes ● add spice mix, miso paste, tomato paste and 200(400) ml of coconut milk ● bring to the boil then simmer

COOK 2                                

Add kale and beans to the mixture ● if the water becomes too thick, add 1/3 cup of water (repeat if required) ● simmer for 2-3 minutes until kale is cooked and sauce has a creamy consistency ● season with salt & pepper if necessary

FINISH & SERVE                  

Slide lemon into quarters ● place rice in a bowl ● top with the bean mixture ● squeeze lemon juice over the top
